What you Need
1 large red onion
3 cloves of garlic
8 large tomatoes
70 grams of tomato puree
2 table spoons of chilli paste
500 ml of chicken stock
1 tea spoon of sugar
olive oil
salt and pepper for seasoning
one egg per person
What to do
- Heat up a pot with some olive oil
- Finely chop the onion and add to the pot.
- Add chopped garlic and chilli paste to the pot, a couple of minutes after the onion.
- Chop the tomatoes medium size and add the tomatoes and the tomato puree to the pot.
- Add some sugar, salt and pepper for seasoning.
- Add the chicken stock, cover the pot with a lid and let the soup simmer for 20-30 minutes.
- Use a hand blender to puree the soup.
- Boil an egg for 5 minutes for perfect egg yolk
